Understanding the math behind the meat
We sell our mixed quarters differently than most producers. Most sell a quarter based on its "hot hanging weight" — after an animal is processed the carcass is hung up and weighed while it is still warm. Usually a customer is charged a per pound price based on a representative quarter of this carcass weight — hence a "front or hind quarter". The quarter is then placed in a cooler to "dry-age". During this process the quarter will shrink (dry) about 8%. Depending on whether it is a front or hind quarter, approximately 35% of its weight will be bones and fat that are discarded. So if a quarter weighed 200 lbs at the beginning of the process a customer will end up with 114 pounds of boneless cuts in their freezer (35% + 8% = 43%. 200 X 43% = 114). In addition to this most producers also charge their customers the cutting and wrapping charges and for delivery. Needless to say, a complicated process to fully understand.
We charge a flat price per pound which includes cutting, vacuum packaging and delivery to your home in either Edmonton or Calgary. The price is based on the weight of the meat that goes into your freezer - not on the hot hanging weight. This way you don't have to worry about the math.
All of our beef is very well trimmed and our ground beef and stew are at least 85% lean. Our meat is also vacuum packaged to extend its freezer life. All cuts are well identified so you know what cut is what in your freezer.
We charge $6.60/lb or $14.55/kg for a Dry Aged Mixed Quarter. You will receive approximately 110 lbs or 50 kgs of beef which is a good choice economically for a family. You will need approximately a 7 cubic foot freezer for a quarter (with room to spare), so be prepared ...
We can customize your order, but this may take a few extra weeks depending on our processing schedule. You can also substitute some of the processed products in lieu of the ground beef. In this instance we would simply charge you a small processing fee in addition to the price:
Sharing with friends or family?
We will gladly divide a mixed quarter into 2 equal portions (as closely as possible) for no extra charge. We will weigh, box, invoice and individually identify each person's portion so all you have to do is hand out the boxes on your end.
