Bone Broth Anyone?

Now that we have the ability to cut and package our own meat I am very excited to be able to offer our customers products that better meet your needs. Soup bones have been on my list to change for a while, and this week things started to happen.

Beef Marrow Bones

We now offer Beef Marrow Bones (above) that are best used for making delicious nutrient dense broth. These bones have had the meat removed to produce a clear broth.

Our Beef Knuckle Bones (below) are also ideal for making nutrient dense bone broth because of the gelatin they produce — and they can be used more than once! When I went on the GAPS diet In June to try and feel better (before I found out it was my appendix!) I made two 4 litre pots full of broth using one large knuckle bone (1.5 kg), two large meaty soup bones (what we are now calling Osso Bucco) and one package of Chicken Feet. Once chilled this broth was solid gelatin and exactly what I wanted! So don't discard the bones after just one use! We are now cutting our knuckle bones in half to make gelatine extraction even easier (and to help them fit in smaller pots!).

We also have decided to offer meaty soup bones (what are also called Osso Bucco) for people who not only want to make this traditional Italian dish, but for those of us that like rich bone broth. Once I use these bones (seen below) to make broth the meat is so tender it makes a wonderful addition to the soup.

Beef Oxtail

By far the best quality beef broth is made by using Beef Oxtail (pictured below). When I used to sell to the Fairmont Hotel group (Banff Springs, Chateau Lake Louise, etc.) the chefs were always making fine consomme using oxtail. But these are in high demand because an animal only has one tail – and we only harvest 16 every month! So when you see them in stock don't hestitate to place an order because they sell very fast!

If you have already placed an order and want to add to it, you can either:

  • Place another order and we will combine them when we fill the orders for that week, or;
  • If what you would like to add is less than our minimum order ($50), please contact us and we will update your order and send you a confirmation email.

If there is something you would like that is "out of stock" on the website, please put a note in the comments section of your order (include the item name and number you would like). If we receive the item before we fill your order, we will happily add it for you. 🙂

If you want to make a broth that is rich and smoky our Pork Smoked Hocks are ideal (pictured below). I bake them like a ham and serve the meat, or take the meat off and add it to the broth after simmering the bone. Delicious!
