Chicken Soup Recipe

There is nothing better than home-made chicken soup, especially when you are feeling under the weather. This is a staple on TK Ranch and I make it almost weekly.

Chicken Broth

  • Soy-free Chicken Backs and Necks (one package of two)
  • (Optional) Chicken Feet
  • 2 quartered medium organic onions
  • Center stalks and leaves (about 6) from one head of organic celery
  • 6 garlic cloves
  • 15 black peppercorns
  • 1 tablespoon of sea salt

I start with either the carcass of a baked whole chicken or some of our soy-free chicken backs and necks (one package of two). If I am using backs and necks, I put them in the oven at 350F (usually frozen because I am too busy to think ahead) until they are golden brown — about 1 hour. Baking them before making stock gives the broth much more flavour.

If I have any extra chicken feet. I also add these because they have so much nutritious gelatin in them (I am finding that once I hit 50, my joints appreciate this). Place the browned bones in the bottom of an 8 litre stock pot and fill it with water — I usually cover the bones with at least 3 or 4 inches of water. To this I add two quartered medium organic onions, the center stalks and leaves (about 6) from one head of organic celery, 6 garlic cloves, 15 black peppercorns and a tablespoon of sea salt.

Bring to a boil and turn down to simmer (covered) for 6 to 8 hours. Strain the chicken and vegetables out and you have the perfect base for all types of soups. I keep the broth refrigerated or freeze it in smaller containers for future use.

Chicken Soup

  • Ground Chicken
  • Pre-cooked organic brown rice
  • Frozen organic peas and corn
  • Sweet basil
  • Fresh minced garlic
  • Sea salt to taste

I usually keep things super easy and to make soup I simply add one package of ground chicken, pre-cooked organic brown rice (keep it on hand in my fridge), frozen organic peas and corn, sweet basil, fresh minced garlic and sea salt to taste. I let the soup simmer for 30 minutes and serve. That's convenience with a healthy twist.

If there is something you would like that is "out of stock" on the website, please put a note in the comments section of your order (include the item name and number you would like). If we receive the item before we fill your order, we will happily add it for you. 🙂
