Over the years we have received many calls from customers wondering why some of our pork products don't look and taste like the items they're used to buying in the grocery store. They are usually pleased with the difference and quality, but want to know the reason why. Understanding conventional pork production is a good place to start. Decades ago the industry determined that consumers wanted lean pork so they started to selectively breed their animals for this trait. In addition to this many consumers wanted the skin left on their bacon and hams for family favourites like crackling so they also started to breed pigs to be hairless. Add to this the factory model of raising pigs inside barns and the need to keep them clean and the modern pig evolved into a lean hairless pink animal like the famous pig in the movie Babe. Unfortunately this evolution created an animal that is ill-suited for any other production model than being raised in a barn. Without hair and little skin pigmentation these animals sunburn easily in the summer. Additionally, because they are bred to be very lean and hairless, they have no natural ability to stay warm during the winter months if raised outside. On TK Ranch we are committed to raising pigs outside in the fresh air and sunshine the way they have been raised traditionally for centuries. We raise heritage breed pigs like Berkshire, Duroc, Large Black and Tamworth because they still have the inherent traits needed to live and thrive outdoors, including a thick hair coat, pigmented skin and a generous amount of fat. At the end of the day the pork we produce is well marbled and fattier than barn raised pork and we wouldn't want it any other way. Fat makes our pork products moist and delicious and reminds us that the pigs were raised outside in a natural, healthy and happy environment. So the next time you buy our pork and notice it is a bit fattier than most, think happy thoughts.
