The Fresh Meat Dilemma

Walk down the meat isle in any grocery store and most products are sold fresh. Now that we have our own cutting facility some retailers want our meat products fresh too. When I tell them selling fresh is difficult for a small company like ours, they just don't get it.

In our fast paced world people have developed a short sighted view of the food system that is often based on convenience. They like to buy fresh meat the day they are going to consume it, but many don't realize what they are sacrificing for this service.

Fresh meat needs to be sold and replenished quickly because it's perishable. This means anyone selling fresh to stores has to produce enough volume to maintain a consistent supply of individual cuts. Retailers want to keep their customers happy, and out of stock items mean lost sales. For this reason they only deal with companies that can meet their sales demands. To supply a store with fresh meat, a company has to be processing a scaled number of animals every day because of the limited number of cuts available per carcass. If you like Tenderloin Steaks, like many people do during the BBQ season, this cut only comprises 1.7% of an entire beef carcass — or 20 steaks. So anyone selling fresh Tenderloin in a store has to be producing and processing a lot of cattle to make selling fresh work, and it's not TK Ranch.

We currently only process a very small number of animals every week — 4 beef, 6 pigs and occasionally a few lambs. Our focus is on a respectful slaughter and producing quality products and both of these take added time. We are not willing to sacrifice animal welfare or quality to produce large volumes of fresh product for retail demand. While there might come a day when we can offer a limited amount of fresh product in our own retail store, our volumes will always be small. So the next time you peruse the fresh meat counter for your favourite organic, natural or grass-fed meats, consider the costs of convenience. .

Our hens will be going out on grass as soon as it quits snowing! Our soy-free eggs are available at our regular pick-up locations. $8/doz for extra large, $7/doz for large, and $6/doz for medium. They are in short supply; sorry! We have purchased more hens to try and increase production so please be patient and thanks!
