Antibiotic Survey Results

Thanks to everyone that participated in our survey. While we didn’t get very many participants, those that did vote sent a clear message. 79.2% of respondents thought we should include the animals that were treated into our program without segregating any product. This would certainly be the easiest for us, but we also want to acknowledge those that voted no. Even though it has been two years since these cattle were treated, some people are still concerned. After much discussion we have decided that we will only offer this product as mixed eighths. This will allow us to market these animals through our program, which is the most animal friendly option, while keeping those of you concerned about any antibiotic use happy. These mixed eighths will offer our customers an additional 10% savings, which is great value. If you would like to pre-order one of these mixed eighths please contact us and we will arrange this for you. There are limited numbers available so please let us know :). Thanks again!

I’ve been feeling a little under the weather lately. Stress is not my friend it seems. So I decided to break out the soup pot and brush up on my bone-broth skills. I do a mixed broth of chicken backs and necks and feet as well as some beef meaty marrow bones and knuckles. Chicken feet and beef knuckles are great for adding beneficial gelatin to the stock. I start by baking the bones until they are golden brown, this makes marrow extraction easier and also adds tremendous flavour. Once browned I cover the bones with water, add two onions that have been quartered, 2 whole garlic cloves, the center part of a head of celery and some carrots. I bring the stock to a boil then turn it down to simmer for 24 hours. I then strain the broth (usually eat the veggies) and refrigerate. This allows me to drink the broth whenever I want, use the stock as a base for rice dishes or make hearty soup. When making soup I add ground chicken because it adds even more flavour as well as rice and lots of veggies. Yum!
