It takes a lot longer to finish cattle on grass and hay than grain. Our cattle average 24 to 32 months of age when they are processed compared to grain fed that are usually 14 to 16 months old. After BSE (mad cow diesase) in 2003 the government put strict rules into place about harvesting any T-Bones/Porterhouse from animals over thirty months old. So these steaks are very LIMITED.
